I like to make mine a little thicker so it still has a some chew. My wife likes it exactly how you made it. My daughter likes it all and we have to hide it where she can't reach.

Good stuff. Ive made it a ton of different ways. Thick is good too!

Youre right on hiding it.. 5 lbs will last me only 1-2 days if my kids know where its stored haha.

Not sure how I missed this thread till now. I wouldn’t say I’m an expert Smoker but I have dabbled a time or two…. Home designed and built. Still have a little more to go on the construction.

Think I'll be trying a smoked meatloaf soon, anyone done that?

Yes. My advice would be to either put it in the freezer for a bit to firm it up or put some foil over the grate for the first 30 minutes of cook time. Otherwise mine tends to smoosh itself into the grate and leaves a giant mess.

I did a few weeks ago. Came out great. I used one of those grilling pans that has holes in the bottom to help keep it from falling through until it firmed up.
