Wonder if it was some kind of medical issue. The steering angle doesn’t change even after the truck rolls. So the driver never tried to correct, which I feel would be automatic for most people once it impacted.

A very good possibility. A family member of mine had a stroke right as she pulled into a parking lot. She doesn't recall any of it. Her vehicle turned sharply and accelerated, hit a curb, causing it to roll upside down and slide to a stop damaging another vehicle. Almost exactly what seems to have happened here. She was fortunate, it was the parking lot for the hospital where she works, and got immediate help.
Of course, the same thing could happen with some clown head-down on a cell phone or entertainment system, or DUI. And there are "infamous rocks" that lots of people hit in parking lot entrances like this.
