the real wood is a veneer. Nothing wrong with that and the wood panels on my Longhorn really accent the interior nicely. It’s not surprising that Stellantis has done so well here, the best companies in the industry for auto veneers are in Italy.May or may not be relevant to the 21 model year, however I had a '14 Laramie. The leather was not "real" in many places. The center console top/arm rest felt more rubbery, and was definitely NOT leather.
My '21 Limited is much nicer.
BUT.... My '14, after ~ 7 years and 100k miles had no issues at all. I have 2 dogs, 1 small and one mid-sized who occupied the cab regularly.
Seats looked great, and wouldn't be concerned with a Laramie interior. Yes... Longhorn/Limited are nicer leather, real wood, etc.

Leather is a complicated question to consider. Arm rests are a torture test for leather because the oil from your skin will discolor it and the uneven pressure will deform it. A lot of companies use synthetic materials for durability because the minute these parts start wearing you notice it. Resale value is negatively affected as well. Seats and door, and dash panels in leather often have some heavy duty coatings on them to block drying and cracking, and on the dash the UV exposure is brutal.
I have my windshield tinted with a product called Llumar that is a 100% tint (clear) that blocks 99% of UV and has an added benefit of slowing the rate at which the interior will heat up in the sun. I’m in Florida so window tinting gets done on everything, but I go with the windshield as well to protect myself and the interior surfaces.
What a lot of car care products won’t tell anyone is that leather conditioner is very often pointless on modern cars because of the surface treatments that are used by the mfg. If you go to luxury and exotic cars it is a mixed bag but on trucks it is durability that is valued above all else. That is what makes the RAM interiors stand out, IMO. They are delivering a luxury product without sacrificing durability. In the last year I have 500+ hours of runtime on my truck and the interior looks exactly like the day I bought it.
