Hello I have a 2016 Ram 2500 diesel. I had the banks pedal monster installed. Any idea what I should have it at to, to pull a 12,500 5th wheel?

That's up to you and how it feels. I have mine set relatively low, but that's how I like it. Play with it and see what you like best

It's not adding any power so it really only matters what pedal feel you prefer.

I don't like to jerk my 5th hard so if I had one (I had an iDrive and removed it), I'd keep it pretty low anyway.

I feel like the pedal monster gets aggressive fast. I keep mine set at city 2-3.

Im a set it and forget it guy, and this is tolerable with my trailers or unloaded.

I leave mine half way up in track and have its engagement set to medium below 10mph. I stomped it one time with it set to max and it didn't seem like it liked it too well. Time will tell on his much damage its doing to the transmission.
