12000lb gvwr on the 3500.

I think I'm reading this right?

23300-10980 - 12000 = 320?

No your GVWR is a registration weight your axle weights should be max 6000 front and 7000 rear i would not be concerned but you could adjust some weight to get some weight off the truck and back in the trailer axles

Your truck with pin weight is 320 lbs. over your GVWR (as loaded when you were weighed). That's the sticker weight, which is a good place to be (and you should try to be within that rating), but not the absolute max capability of the truck.

Curb weight includes the truck and all fluids...so if your fuel tank was near empty, your weights with a full tank or loaded up with more stuff will be higher and could exceed rear axle capacity (assuming you have a 7000 lb. rear axle).

What are you towing?

Just filled up the tank when I weighed. Truck has me, wife, dog, and the portable generator which weighs about 100lbs.

Towing a Montana 3121rl 5th wheel.

Also I have a gvwr of 12300lbs. So I guess I'm only 20lbs overweight lol

I personally wouldn't panic, but the other side of that is if you had a serious crash... Bad enough for a reconstruction and weighing... Then you could have some liability...it's an individual decision. If your going 50 miles down the road is one thing... 5000 miles another.

I'd try to bring it down. I was where you are with my last setup. I had plenty of trailer axle capacity with 7000 lb axles and H rated tires, but insufficient payload capacity in the truck. I bought a rear carrying platform and carry box and load it to the rear hitch capacity. This decreased my PIN weight by a percentage and brought me back to GVW.

I'd store the gen in the back of the trailer if it's portable, empty trailer tanks etc.

Probably should have ordered a dually, its only $1k difference in limited trim, I pull a heavier trailer than you but have similar pin weights, I was pulling it with my '18 3500 SRW, which at the time thought it did pretty well, but I was about 3k overweight on my GCVWR, and right at 12,300 total on the truck.
I wasn't expecting much difference when I bought my dually but they really do handle he weight better, I mostly noticed the stability in corners and while braking, definitely a more relaxed towing experience.

If I ever have to go dually, it would be an MDT or HDT.

Well I'm definitely overweight here on my rear axle. This is annoying. Is my truck going to implode?

I have a ticket just like that from my old truck. Should be pretty easy to move 120lbs of stuff from the front of the trailer back if you're concerned.

I was running with both grey tanks full which are in the middle and front. Typically If we are going somewhere it's with the fresh water full which is in the back.. thinking that was the issue

I have the same in our 5th wheel, the fresh tank is behind axle, and all the grey/black are over axle and forward so the pin weight goes up leaving a spot vs arriving. If thats with your grey tanks full you just need to shift a little weight off the pin until you can dump the tanks out that looks easily handled.
