Was thinking about adding a set of Logigair to my 3500, by doing this would it affect the stock ride performance while not towing? by adding them, would it raise the rear of the truck from stock to a bit higher due to the mounting hardwear?

Since airbags have a minimum pressure there will be a slight increase in spring rate when you’re empty, but it’s pretty negligible.
The empty height won’t increase if you keep the airbag at the minimum pressure when unloaded.
How much sag are you getting now when towing?

I wouldn't bother with airbags then. You want to let the stock springs settle 1-1.5" and then use airbags to maintain that height for the best ride and handling. If you use airbags to raise the truck back to stock height the ride and handling will suffer.
