I think you've gotten your answer many times over, but I'll add to the pile. I have a 2500 4.10 Hemi and it was the right choice for me, but I wouldn't consider it suitable for what you're looking to do.
To be concise (OK pedantic), 4.10's are only available with an SRW Hemi or DRW. SRW diesel is only available with 3.73 rear. The phrasing would imply otherwise.
While I am a big fan of the Hemi and have the 2500 MegaCab with the Hemi and 4.10 rear end, I would not want to tow more than about 12k with it. My rating is for just over 16k but I don't think it would do well in the mountains with it. As others have said, you would be best off with the Cummins and a 3500. There is no where near enough payload in a 2500 (especially with the diesel) for what you want. First find the 5th wheel that you want. Then spec out and order the proper truck to tow it. Consider the MegaCab, so much more room in the back for people or stuff. Thats important with a 5th wheel as your bed is basically used for the 5th wheel hitch. Depending on length and weight of the 5th wheel you may want to consider a dually. Best of luck with whatever you decide!
