I just had my alignment done today on a 2019 Ram 2500. I have the 2" Thuren Hemi coils, overland shocks & track bar.

I verified the alignment shop did the toe/caster correctly but when I got home the cam bolts are like this.

Is this a problem?

1st photo is passenger side at the 1st click to rear

2nd photo is driver side maxed out to rear

I might be wrong on this, somebody correct me!
The front axle will not twist due to different settings on each side, therefore, adjustments should be equal on both sides! However, if the adjustments are unequal, then the side to side height will change. Very similar to lengthening/shortening the sway bar links....

In other words, you cannot set the castor independently on a straight axle RAM (at least not with the radius arm cam bolts)....

The truck measures within a 1/4" side to side. If that matters

Yeah, I don't think it' will make a huge difference, however, it will bind your radius arm bushings and could inhibit flex in off-roading situations...

I am mechanically inclined, did the lift myself but don't understand the alignment on this truck. Can I simply change the driver side cam bolt to get it within 1 click? Or will that throw everything else off and need another alignment

This is what I would do, average them out, that should result in the same castor angle you have now without binding anything. The toe-in/out should be unaffected by this, as well as your steering wheel centering... I don't think camber is adjustable on the RAM? If you have an inclinometer, you could check it before and after, and adjust to correct as necessary...
Your castor is about right, according to your sheet (attached)...

So I would adjust both sides then instead of taking it all from 1 side correct?

Thuren says 1 click to the rear is best on a 2-3" lift so I thought maybe just back the driver side bolt back 1 click and add .5 click to passenger side. Then they would be within 1 mark of eachother.

I don't have the meter
