I have a 2015 ram 3500 and want to put new wheels and tires on it. I want to go with 18" wheels as to still have some sidewall. What is the widest wheel and largest tire I can fit, without having to lift or level, and still have tire clearance so it doesn't rub?

You're doing it wrong
You should be posting in the 4th gen section but you can go 35x 12.5 without rubbing or minor rubbing depending what wheel you use

I ran 295/70/18 with 18x9 +20mm offset aftermarket wheels, on my stock 2018 2500. No rub and I wouldn't go larger with that setup.
