Any rough idea before I take time to remove it, what’s a rough idea what the weight of the mega back seat? Trying to gain some payload to be legal with a 5th wheel until I find the right 3500.

Payload is not generally a "legal" statistic. I would look at axle, tire, and suspension ratings and if you are under those you should be good (this is what DOT uses for commercial towing). You seat is not going to make a meaningful difference imo.

I am worried about insurance. I have a 2500 mega cab and payload is only 1944 per door sticker. The 5th wheels I am looking at has pin weight from 1790 to 2000 lbs. We travel with just me, wife and two dogs. Approx 430ish lbs.

Is that the pin weight the manufacturer has provided? If so, actual pin weights will likely be even higher. I don't think anyone has ever been able to hold up a court case where someone towing overweight wasn't grossly overweight. Not saying it couldn't happen, but they would have a hard time proving you were 10s or 100s of pounds over the payload, which again is not a legal limit. That risk is up to you. If you are concerned about it, you will need to upgrade your truck before you buy your trailer.
