Odd coolant temp readings

I've had this truck about a year now, it's a 2022 ram 2500 with the 6.4, and have noticed the temp gauge is "acting odd" when I fire it up everything is normal. The gauge shows it's at the lowest notch. It's starts moving at around 100 degrees. However it reached almost to the middle notch at 160. Going off the number from the digital gauge the temp still increases up my normal 210-220 but the gauge is still showing it at the same mark as 160. I tried to run it hard to get the temps up more to see if the gauge moves more. But it's still cold here and the highest I saw was only 230 running at 4k+ rpm for over a mile, but it was only there for a few seconds. This truck does like to cool down rather fast in my opinion. My concern is if I'm towing or get a leak that the gauge won't show over that mark. I'll try and post pictures to help show what I'm seeing. But is this normal? Will the gauge start moving with higher temps? Or do I need to start fixing/replacing things? Thanks for any help.

The gauges are not a accurate like that due to the amount of people who complain the opposite, when the temp reaches higher than whats considered normal the gauge will go up and peg out. My 19 cummins is the same from 160-200 it stays normal but when it hits over 200 it goes up a notch
