I will be buying my first Diesel truck this week, a 2021 Ram 2500 with the 6.7L Cummins Turbo Diesel. My question is how many miles for breaking in the motor and any do's and don'ts? Whatever input you all want to give me will be greatly appreciated.

There is no break in. Follow the manual for service and enjoy it. Don't over think it.

only break in advice I got from the dealer two weeks ago was not to tow with it for 500 miles. Service Manager explained that was not engine related, but rather differential break-in.
As an also first time diesel owner, what an AWESOME truck! I cannot believe how smooth, quiet, an pleasurable it is to drive.
BTW, first thing is to check tire pressures and drop it to recommended pressures (on door sticker). I dropped mine from the delivered pressure of 95 psig to 65 psig. Very noticeable improvement.
 
Drive easy until reaching running temperatures and if towing, running hard or high speed HWY idle down a minute or so before shutdown. Check fluid levels regularly and stay up on maintenance and read your owner's manual.
