I never authorized activation of either SiriusXM Guardian or Ram Connect for the specific reason as you state - I don't want any telemetrics, data, or whatever collected and sent anywhere outside of my truck. Yet I still get a monthly email report from RAM/Stellantis showing oil life, mileage, etc etc. The cynic in me thinks that all my locations and routes, because of the internal GPS, are also transmitted without my knowledge or approval. I thought when the free 30/60/90 day subscriptions of SiriusXM and Ram Connect ran out that would be it....they would stop, desist, quit reporting back to RAM. Nope! Those monthly emails keep on a-coming. My next step is to request that 'emergency services be deactivated' as referenced here:

"If you do not want any Emergency Data to be collected, or used, or shared by FCA US or Sirius XM, you must request the emergency services be deactivated together with the Services by calling us at 1-844-796-4827 and ask to cancel Uconnect and SiriusXM Guardian Services for privacy reasons."
I have no idea what 'Emergency Data' is or if it has anything to do with the telemetrics being sent, but whatever it is I want it shut off. I've never needed any other rig of mine during my 55 years of driving send emergency data somewhere in case I get stuck. I guess I'm old school enough to be able to handle situations on my own. Sure, I've heard lots of stories like, "It sure was nice to push the Emergency SOS button, sit back, and have help come." As nice as that function is, it doesn't convince me that I need to have all my truck statistics and metrics sent out into the ether.
Anyway, if you go the above route to have Emergency Data not collected, I've heard that once that action is disabled so to is the internal wireless network - something to that effect.
Final step would be to locate the modem and disconnect it - after the warranty runs out of course. If any OTA updates must be done after that, I can do it via a thumb drive.
