I've seen posts that say 35x12.50 20 tires will work on stock height 3500 SRW, some say possible slight rubbing at full lock.

I'm getting Falken WildPeaks. Torn between 285/65/20 vs 35x12.5 20. Would prefer to go to the wider 12.50 tire I believe even though it has more plies than the 285 (E vs F rated). Just want to understand what rubbing, if any, I should expect on a non-leveled or lifted stock 2300 4x4.

You will rub with the wide tires because of the narrow stock wheels. It will hit the radius Arms and trimming will be needed. Or get a better offset wheel and you won't have a big of issue

My wife thinks I only have 3 guns
 
Thanks for confirming! I’ll stick with the 11.50’s for now and maybe do the wheels on the next tire change
