How can I determine which stock alternator I have? What is it's actual output?

Either 180A or 220A you would have to either check your build sheet or check the part number. If you stop by your dealer usually they can print you out the option sheet.

What engine do you have? What year?

But the most reliable way is the build sheet or window sticker.

If you don't have the window sticker, FCA also has a site were you can add your vin to the URL and get the window sticker with all the options and specs.
