2017 ram 2500 6.4 overheating

My 2017 Ram 2500 with 6.4 is overheating. It started the other day when I was pulling a trailer now it’s doing it without the trailer hooked. I checked the fluid before I start it and make sure it’s at the min level. The gauge will go all the way up and the warning light will come on and in less then a minute the gauge will go back down to the half way mark. I have changed the thermostat multiple times and I have changed the fan clutch. The last time I changed the thermostat was in September and the truck had been running good until recently. My next move is to replace the thermostat with one from the dealer and not an aftermarket. Could there be a sensor failing? When I shut it off and restart it still stays hot. The picture below is what it looked like the other day.

Have you tried flushing your cooling system?
I’m not sure if they did that. They did say they pulled the drain plug from the radiator and nothing came out. They put a screw driver up into it and got a bunch of gunk but still no fluid. They pushed air up through the plug hole and got some air. But still no fluid came out. I drove truck home and was watching temperature and it got up to 231 and started coming down and stayed around 215. I got home and shut truck off and I could hear gurgling coming from the hose that goes into the top of the radiator and watched the fluid in the resavoir rise up to the top and start spilling fluid over the resavoir. The fluid eventually went down. 20 minutes later I took the truck to town and popped the hood when I stopped and it was acting completely normal. I was where I was for a couple hours and when I came home it did the same thing as it did when took it home from the shop.
