Looking at new tires for stock 2020 2500 crew diesel. sizing input

As the title says, I'm looking to replace my stock tires soon on my 2020 crew cab long bed. It's a diesel 4x4 with the offroad package. I'm going to go with Cooper ST Maxx based on my past experience with them on another truck and how I use my trucks. (lots of logging roads with heavy black rock that likes to eat soft tires) I may add a level kit, but for now I'm running stock suspension. I'm trying to decide between the 305/70 R18 (35-12.50)or the 295/70 R18 ( 34-11.50) It seems like many on here are running 35's on stock wheels without problems. That being said the 295 seems like a pretty attractive size for a touch more tire without any fitment concerns and they have a higher load rating. Any thoughts on this? I doubt these trucks even notice any performance change with 35's, anything I should know as far as wear and tear? Harder on transmissions or anything else? I've had lifted rigs with big tires that were dogs and usually prefer a modest upsize. Any input appreciated
 
We own a 2014 2500 4x4 Cummins with a leveling kit, a 2016 PW, and 2024 3500 4x4 Cummins. The tire sizes are 285 75R18, 35 12.5R17, and 275 75R18.

Our only truck that doesn't rub against the control arms is the 2024. I ran S/T Maxx in 34's with a 285 (11.5") width on the PW without rubbing. Going back to that size next month to prevent rubbing on our tight off-road turns. Rubbing is minor.

The Toyo C/T's on both our 2016 and 2024 have a longer tread life on our volcanic rock unpaved roads than the S/T Maxx ever did on our 2016. I punctured right through a S/T Maxx on the PW out in the boonies 25 miles off of US 50 Nevada. Something I didn't expect.
